Simple Sandwich Spreads
Moroccan Spiced Hummus
Makes 2-1/2 cups
Ingredients
2 cans (15 1/2 oz.) garbanzo beans, drained and rinsed
1/3 cup honey
1/4 cup lemon juice
1 teaspoon ground cumin
1 teaspoon minced garlic
1/2 teaspoon salt
2 to 3 Tablespoons fresh cilantro or parsley, chopped Cayenne pepper
Directions
Combine all ingredients except cilantro in a food processor or blender. Process until smooth. Transfer mixture to a serving bowl. Stir in chopped cilantro or parsley. Serve spread on meat or vegetable sandwiches.
Honey and Fruit Spread
Makes 3/4 cup
Ingredients
1/2 cup butter, softened to room temperature
1/4 cup honey
1/4 cup dried fruit (apricots, raisins, dates), chopped
2 Tablespoons pecans, chopped
1/2 teaspoon orange peel, grated
Directions
Combine all ingredients; mix well. Keep in sealed container in refrigerator for up to two weeks.
Serving Suggestions
Spread on English muffins or biscuits.
