Overview

Within the pages of this resource database, you will find a collection of information about usage and functionality of honey in a variety of food products, as well as general and specific honey research summaries.

The Menu

Use the menu at the left to explore the information database. For each product type listed in the menu, you may find:

Tables applying the beneficial characteristics of honey to its application in that food.
Fact sheets sharing the results of food development research sponsored by the National Honey Board, many containing formulations for product prototypes.
Summaries of technical honey research.

The Gold Button

The button at the top labeled "Honey Technical Specifications" will take you to a section that contains detailed technical information about honey in general. Here you will find the chemical makeup of honey, official definitions of honey and honey products, a glossary of scientific terms used throughout the articles, and other honey facts.
