Late last year we conducted a survey geared toward foodservice professionals to gauge their knowledge, usage and perceptions of honey. This was an eye-opening endeavor with more than 600 respondents.

So, what’s the bottom line from this survey? It’s that you definitely can expect to see plenty of honey on menus across the country in the coming year. Here are a few highlights from the survey:

 

  • Honey is the preferred sweetener, second only to sugar
  • 18% of respondents used more honey in 2010, attributing the increase to new menu items (34%) and greater demand (22%)
  • 21% of respondents expect to increase honey usage in 2011
  • Customer demand and trends are “very” to “extremely” important to 82% of operators when making purchase decisions (topped only by cost, at 85%)

  • Get those palates ready for some sweet dishes – honey is on its way to stardom!
