The National Honey Board developed this curriculum to communicate the value and benefits for honey - as food, an ingredient and a marketing tool - to student and professional culinarians. On this CD, you'll find an advanced classroom teaching guide divided into four learning blocks: Life of the Hive; Ingredient Functionality; Varietal Honeys; and Tasting Workshop with Culinary Applications. We've included a PowerPoint presentation that emphasizes key learning points, as well as an appendix of honey information, references and resources.
