This report, together with the report submitted February 1952 describes the work done under Phase A of the above contract. A sample of dried honey-skim milk, as originally prepared for the contractor by the Department, was evaluated as an ingredient of four types of prepared mixes for baking. These are cake doughnut mix, yeast raised doughnut mix, yeast raised coffee cake mix, and yellow cake mix.
