HEAVEN’S eye may be on the fallen sparrow, but it was the chemist who rescued the fallen apple - at least the 25 million bushels (Out of the U.S.‘s annual 120 million) that are surplus or culls. During World War II, Government chemists, chemical engineers studied the apple, voted its juice as the aspect “most likely to succeed.” So, they treated the juice with lime; heated it to 180°F; clarified; added acid; evaporated to 75% solids. Result: “apple syrup.”
