Glass Color Standards for Extracted Honey

Excerpt:

The colors of commercial extracted honeys, in thicknesses of about 30 mm, range continuously from a pale yellow through amber to deep red or even black, depending on floral source and composition. In general, the lighter colors are associated with delicate flavors and the darker colors with strong flavors and less attractive appearance, It is natural, then, that color has been for many years a factor in the grading and marketing of honey.
