The United States Department of Agriculture has supported research on honey intermittently since about 1887. A summary of the early chemical work is available elsewhere (White 1961); this article will be concerned only with the analytical and biochemical research conducted in the author’s laboratories since 1948, which ended with his retirement from Government service in 1978.
