I wish to express my appreciation to Dr. Pang for this opportunity to review briefly the development and use of the stable carbon isotope ratio procedure to show the presence of certain sugars when added to honey. Honey has been recognized for centuries, even millennia, as a special dietary treat. The undeclared addition of sugars has been practiced for many years. In the United States honey was one of the
materials selected by Dr. Harvey W. Wiley in the late 19th century for the work that finally led to the US pure food laws in 1906. Since that time hundreds of research papers have been published on this subject in the US and particularly in Europe.
