A need exists for a relatively inexpensive objective instrument to measure color and water content of honey. Existing instruments are the Pfund color grader and the (hand or bench ) refractometer. Both require individual judgment in reading values, which contributes to difficulties in trading honey since the price is greatly affected by these parameters. Since both measurements are optical, it should be possible to design a single photoelectric instrument for each function, preferably with digital readout.
