Control must be established over the moisture content of the product. This will require knowledge of the moisture content of each drum of honey as it enters the process, and blending within lots as required to keep the finished products within the desired range of l7-1/4% to 18-1/4% for set honey and 18-18 3/4 or there about for clear honey.
