Why do some honey types seem to naturally have lower diastase values than others? Since it is agreed that the enzymes are added by the honey bee during the collection and especially the ripening of the nectar to the heavy consistency of honey, and it is known that some nectars are naturally much heavier to start with than others, they therefore require less manipulation by the bees in the hive to attain that heavy consistency.
