Most methods for the determination of carotene depend upon a partition between two immiscible solvents for its separation from other pigments. Peterson has discussed such methods from a historical and critical viewpoint. Many methods in use today employ 85 to 90% methanol or ethanol and a hydrocarbon as the two phases.
