There are many legends and tales of the virtues and values of honey, and a perusal of the current American beekeeping journals shows that not all the legends and fairy tales are inherited from the past. Some are being manufactured and circulated today. Much of the information given in this review has been discovered during the seven years since an earlier review was published in Bee World on the composition and properties of honey (Pryce-Jones, 1950). Both before and since that date, honey has been studied far more intensively in Europe than in America.
