Excerpt:

Glucose oxidase, producing gluconic acid and hydrogen peroxide from glucose, is demonstrated in honey. Its activity increases markedly on dilution of the honey. Inhibine, the antibacterial material previously reported in honey, is shown to be hydrogen peroxide produced in the inhibine assay by the natural glucose oxidase in honey. A direct relationship is shown between inhibine number and hydrogen
peroxide production.
