The first analytical survey of American honeys to appear in over 50 years has been published by the U. S. Department of Agriculture. The 124-page book is the result of years of study by the Agricultural
Research Service on the 1956 and 1957 crops of honey. Honey’s competitive position in the market and in the food industry should be improved by application of the fuller knowledge of honey composition provided by this work. The study included 504 samples of honey and honeydew originating in 47 States and representing 83 single floral types, 93 blends of known compositions. and 4 honeydew types .
