New Bee Rescue is located in a unique spot in New Mexico near Albuquerque's North Valley. Here there are large fields and uncrowded farm areas where Canadian geese and majestic Sand hill cranes winter and forage. An abundance of sunshine is prevalent almost year around with relatively mild temperatures. This region produces several exquisite floral sources, however, there is one that towers (literally) over all others; the massive and beautiful Catalpa Tree. The fragrant,white, delicate Catalpa blossoms are prominent against unusually large green leaves in early spring. Catalpa honey is very light in color and posses a near citrus quality about it. Perfect honey to add distinction to whatever it accompanies; whether baking,slathering on your peanut butter sandwich or over ice cream. Of course we have an excellent, bee-licious Clover honey and a small amount of rare Purple Sage Honey,plus one of my favorite New Mexico blends; Cafalfa honey.
