Bacon, Avocado & Egg Breakfast Pizza

YIELD: Makes 8 servings

INGREDIENTS

1 pkg. - jumbo flaky refrigerated biscuits

1/4 cup - honey, divided

2 - avocados, peeled and pitted

1/2 tsp. - salt

1/2 tsp. - cumin

1/2 tsp. - hot sauce

2 tsp. - lemon juice

8 pieces - thick cut bacon, cooked crisp, cut into 1" pieces

8 - eggs, cooked sunny-side up

salt & pepper, to taste

DIRECTIONS

Preheat oven to 350°F.

Roll out flat each biscuit to approximately 5" and bake 4 minutes. Drizzle with 2 T honey and bake an additional 4 minutes.

While the biscuits are cooking, smash the avocado pulp, remaining honey, salt, cumin, hot sauce and lemon with a fork.

Evenly spread the avocado mixture between the biscuits and sprinkle the bacon evenly between them.

Top each biscuit with a sunny side up egg, sprinkle with kosher salt and freshly ground pepper.

TIP

For a slimmed down version, use whole wheat English muffins instead of biscuits and turkey bacon instead of regular.
