Honey-Jalapeño Vinaigrette

YIELD: Makes 3/4 cup

INGREDIENTS

1 1/2 T - white wine vinegar

1 1/2 T - fresh lime juice

1 T - fresh cilantro, coarsely chopped

1/2 T - jalapeno pepper, coarsely chopped

1 large clove - garlic, quartered

1/2 tsp. - salt

1/4 tsp. - freshly ground black pepper

1/3 cup - honey

1/3 cup - vegetable oil, such as canola

DIRECTIONS

In a blender, process vinegar, lime juice, cilantro, jalapeno, garlic, salt and pepper. With blender running, add honey, then oil.
