YIELD: 8 to 10 servings
Brew a cup of hibiscus tea by steeping tea bag in hot water for 5 minutes. The tea should be a deep red color; you can brew longer for a deeper flavor, if desired. Pour tea into a large saucepan over medium heat. Add honey. Stir mixture frequently to avoid burning. After approximately 15 to 20 minutes and as the temperature of the mixture approaches 300 degrees (check with candy thermometer if you have one) add in the chopped mint leaves and continue mixing for one minute. When the mixture reaches 300 degrees, remove from heat and carefully pour into silicone lollipop molds and add lollipop sticks. Allow to cool and harden at room temperature. Once set, you can wrap them up individually using small squares of wax paper and store them at room temperature.
