Colusa Corn Muffins

In small bowl, beat together milk, butter, honey and eggs. Set aside. In large bowl, stir together dry ingredients. Add honey mixture. Stir just enough to barely moisten flour. Do no overmix. Spoon batter into paper-lined or greased muffin pan cups. Bake in preheated oven at 350°F for 20 to 25 minutes. Serve warm.   *can substitute 3/4 cup yogurt

Yield: 18 muffins

Ingredients

  • 2/3 cup - milk*
  • 1/3 cup - butter or margarine, melted
  • 1/2 cup - honey
  • 2 - eggs
  • 1-1/2 cups - whole wheat flour
  • 2/3 cup - cornmeal
  • 2-1/2 teaspoons - baking powder
  • 1/4 teaspoon - salt

Tip

For variation, pare, core and dice one large pear or apple. Add to flour mixture.
